This recipe was first shared on The Recipe Critic.

I’m choosing to ignore the fact that a lot of my American friends have kids going back to school and just plug on enjoying my summer here with these insanely awesome bbq Instant Pot Ribs.

Are we good?

Good.

Ever since these Slow Cooker BBQ Ribs came to be, I’ve been dreaming of one day making a pressure cooker version that is just as amazing.

We all know by now that the Instant Pot can do amazing things:

  • throw some frozen chicken in the Instant Pot and out comes dinner in about 20 minutes
  • Cook an Instant Pot Whole Chicken, then cook some homemade broth, and then some homemade Instant Pot Chicken Noodle Soup, in just a few hours
  • Make true one pot pastas like this Instant Pot Baked Ziti andInstant Pot Chicken Alfredo Pasta.
  • Transform regular old chicken into a sensational meal to rival Olive Garden with these Creamy Italian Instant Pot Chicken Breasts
  • And more!

It’s time to bring on the ribs.

Juicy, always tender, always falling off the bone, no-one-will-even-know-how-you-did-it-if-you-don’t-tell-them kind of ribs. Smothered in your favorite barbecue sauce and finished on the grill, or not.

How to make Instant Pot Ribs:

  1. Remove the membrane from the back of your ribs — check out this video tutorial hereto help you.
  2. Stir together your rub ingredients and liberally rub your ribs all over.
  3. Pour 1 ½ cups of cooking liquid in the bottom of the Instant Pot (I use a 6 quart, but you may need an 8 quart if you have a lot of ribs) and place the trivet inside.
  4. Place your ribs on top of the trivet, curling them around the outside edge of the pot to fit.
  5. Put the lid on and pressure cook until tender and juicy!
  6. Always let the pressure release naturally, then remove and either brush with bbq sauce and serve, or brush with bbq sauce and broil or grill for a few minutes for an authentic smoky flavor.

What are the best ribs to use in this recipe:

This Instant Pot Ribs recipe is for pork ribs and not beef, but you can choose either side ribs or back ribs for this recipe, depending on your preferences.

Side ribs

Side ribs are generally less tender (i.e., less desirable) and therefore less expensive. I often buy side ribs on sale, because with the right cooking techniques you can transform them into something amazing! With the Instant Pot, these ribs are going to be falling off the bone so I wouldn’t worry at all about using side ribs for this recipe.

Baby back ribs

Back ribs (baby back ribs) are more tender and have more meat on them, but they are also more expensive. You will cook both exactly the same, so choose whichever you like.

Perhaps you choose side ribs to enjoy on a regular basis, and upgrade to baby back ribs for a special occasion or when they’re on sale. Or maybe you live for ribs, and you’re going all out with baby back ribs every time! The choice is yours.

Variations on these easy Instant Pot Ribs:

  • Swapping out the cooking liquid is an easy way to totally change the flavor of these ribs: try any clear liquid, soda, broth, beer, cider — get crazy!
  • Bump up the spice or swap out the rub for one of your favorite prepackaged spice mixtures and cut down on prep time
  • Cook them in the Instant Pot, then refrigerate for up to 1 day, then brush with barbecue sauce and grill just until warm — perfect for parties!

The last time I made these they didn’t turn out as tender as I would have thought. I’m thinking of adding a little cook time to them, do you think an extra 10 minutes would be too much?

    • Ashley Fehr says

I don’t think 10 minutes extra will hurt!

These were excellent!! So tender! Can I do two racks of ribs at the same time? Do I need to change the recipe at all to do that?

I am making these for the second time. The first time they turned out to be fantastic. The meat was falling off the bones just trying to get them out. I’m super excited as I’m making 2 racks this time. Thanks for the recipe.

FAQs

Do you cook ribs meat side up or meat side down? ›

Place ribs bone-side down in smoker at 225 F /110 C and cook for three hours. Remove ribs from the smoker and wrap tightly in aluminum foil to form an airtight seal. Return to the smoker bone-side up and smoke for two hours. Unwrap the ribs and return to the smoker bone-side down for one more hour.

How much liquid do you put in the ribs in an Instant Pot? ›

In a small bowl, combine the smoked paprika, chili powder, onion powder, dry mustard, garlic powder, salt, black pepper, and cayenne. Blend the spices thoroughly and then rub the mixture all over the ribs. Place a trivet in the Instant Pot and add the 1 cup of stock or water and the apple cider vinegar.

Why are my ribs tough in Instant Pot? ›

Why are my pork ribs tough when cooked in the Instant Pot? This means that they're not cooked long enough. Be sure to cook the ribs for the full 30 minutes on high, and let the pressure release for 15 minutes before removing the lid.

What is the difference between back ribs and side ribs? ›

Meatier than the Back Rib, Spareribs – also known as side ribs - are thick, juicy, and come from the belly section of the pig (where bacon comes from). They usually come with the sternum, costal cartilage and flap still attached. From the Sparerib you can get St. Louis style or Louisiana style ribs.

Do you cook ribs meat side up or rib side up? ›

Do You Cook Ribs Bone Up or Bone Down? Place the ribs with the bone side facing the heat source. The bone side has little meat, and it will take the brunt of the fire's heat. This leaves the top, meaty part cooked beautifully.

Do you cook baby back ribs up or down? ›

5 – Put the ribs, bone side down, on the 180 degree grill for 2 hours. 6 – After 2 hours, it's time to wrap the ribs in foil.

What is the 3 2 1 rule for ribs? ›

Essentially, 3 2 1 ribs go like this: 3 hours of smoking the ribs directly on the pellet grill. 2 hours wrapped in foil, still cooking on the grill. 1 hour of cooking, unwrapped and slathered in barbecue sauce.

Do you cook baby back ribs meat side up or down? ›

I always smoke mine bone side down (so the meaty side is facing up), for two reasons. First, I want the smoke to penetrate the bone side too, so each and every bite of the ribs is equally smoky and delicious. Secondly, if you cook them bone side UP, the juices will pool in the concave center of the bones.

Is it better to slow cook or pressure cook ribs? ›

Yes, you can use a pressure cooker to make tender and flavorful ribs, although it won't give you the same texture or flavor profile as traditional slow-cooked or grilled ribs. Pressure cooking is a faster method that can help you achieve tender and juicy ribs in a shorter amount of time.

Do you put water in bottom of pan when cooking ribs? ›

Pre-heat oven to 275 degrees. Use a 2 piece broiler pan, the lower half filled with very hot water, then layer racks of rib on the top. Ribs can be left whole in racks and layered, I have done 6 at a time, they still come out great.

What liquid to add to ribs? ›

3 – Smoke Ribs for 3 Hours.

Spritz: During the first three hours I also like to keep adding moisture to the pork with a spritz. A spritz is simply a spray bottle with liquid. We use equal parts apple cider vinegar and water (you can also add equal parts apple cider vinegar and apple juice for a little more sweetness).

Do ribs get more tender the more you cook them? ›

Your goal is to get good color and caramelization on the outside of the ribs, but also to cook them long enough that the tough collagen breaks down and the meat becomes tender. Generally, the ribs will be browned before the meat is done, which is where the balancing act comes in.

Why are my baby back ribs so tough? ›

If you don't remove the rib membrane before cooking, it can make the ribs tough and chewy. The membrane doesn't break down during cooking, so it can be difficult to chew and can ruin the texture of the meat.

Why are my baby back ribs tough? ›

Meat Thermometer

The light connective tissue in ribs begins to break down around 195 degrees F. Anything under that temperature and your ribs will be chewy, stringy, and tough. At 195 degrees F, that tissue starts to gelatinize and turn into tasty, melty deliciousness.

Which way up do you cook ribs? ›

Make sure the meaty side of the ribs is facing up. Broil until the sugar in the dry rub is bubbling and the ribs are evenly browned, about 5 minutes. Bake the ribs. Set the oven to 300°F. Move the ribs to an oven rack in the middle of the oven.

Which side goes down first when cooking ribs? ›

Place the ribs bone-side down, on the cooler part of the grill (indirect heat). Cover and cook, rotating the ribs once, until the meat is tender and pulls away from the bones, about 2 hours.

Do you cook ribs bone up or down when cooking? ›

Remove the ribs from the marinade and add them to the grill over indirect heat, bone-side down. Cover the grill and cook, rotating once or twice, until the meat is tender and the internal temperature reaches somewhere between 180 and 195 degrees.
